Overview

Under direct supervision of the Executive Chef, Restaurant Chef and/or Food and Beverage Director, the Sous Chef is responsible for the day-to-day operation of all kitchen facilities, inventories and personnel.

Responsibilities

  • Customarily and regularly directs the work of 2 or more employees performing the following functions: Food Production and service.
  • Responsible for the hiring, training, scheduling, evaluations and the disciplining of assigned staff.
  • Demonstrates the flexibility and adaptability necessary to work in an environment that will require working in various locations and with various menus.
  • Performs a wide range of related duties as needed or requested by the chef.
  • Maintain health and sanitation codes.
  • Ability to communicate with management of all departments and co-workers.
  • Must be skilled in the preparation of all menu items, its storage and rotation.
  • Maintain labor and food costs in accordance with the company budget.
  • Ability to work quickly and efficiently while maintaining a clean work area.
  • Must be able to follow instructions and produce in a constantly changing environment.
  • Knowledge of proper thawing and food storage procedures; portion controls, plate presentation; meat cutting; causes and prevention of food borne illness; proper cooking temperatures; health and sanitation regulations; banquet preparation and presentation; and baking preparation.
  • Other duties may be assigned.

  • Any combination of education and experience that could likely provide the required knowledge and skills for this position.
 
*Shift Differential: Non-Exempt employees will receive a $1.00 per hour shift differential for any hours worked between 10:00pm and 6:00am.
 

This is not a smoke free workplace.  Although we employ state-of-the-art air filtration systems, cigarette smoke is in the work environment.
