Overview

Responsible for all hotel food operations including room service, coffee café and banquet and kitchen facilities, its inventories and personnel in accordance with Food & Beverage Department policies.

Responsibilities

  • Performs a wide range of related duties as needed or requested by the Executive Chef
  • Responsible for the hiring, training, scheduling, evaluations and disciplining of assigned staff.
  • Oversees the purchase of all food products and the preparation of all menus.
  • Maintains health and sanitation codes in kitchen facilities.
  • Must effectively communicate with guests and co-workers.
  • Preparation of food, its storage and rotation.
  • Maintains labor and food costs in accordance with the company budget.
  • Menu planning and its implementation.
  • Maintains order, production and leadership in an environment with constantly changing conditions.
  • Knowledge of food purchasing; portion control; and operation of all kitchen equipment. 
  • Other duties may be assigned.

Qualifications

EDUCATION and/or EXPERIENCE

  • Any combination of education and experience that could likely provide the required knowledge and skills for this position; degree from culinary school preferred; minimum of five years apprenticeship on-the-job training.
